31 Jul Artichoke pesto products
In co-operation with Maastricht University (College Venlo), our partners in Italy and generous financial support from the foundation Noord-Wolfsbergen we have developed a range of health promoting pesto products on the basis of edible parts of the artichoke plant that are currently not used for human consumption. These products are considered eligible for a ‘source of fibre’ claim. By comparison with other pestos, Pesto di Carciofi is low in caloric value. Finally the product scores highly in levels of folic acid, minerals and phytonutrients. A range of five varieties was tested by a representative group of consumers who all responded very favourably to its quality.
