Artichoke pesto products

Artichoke pesto products

In co-operation with Maastricht University (College Venlo), our partners in Italy and generous financial support from the foundation Noord-Wolfsbergen we have developed a range of health promoting pesto products on the basis of edible parts of the artichoke plant that are currently not used for human consumption. These products are considered eligible for a ‘source of fibre’ claim. By comparison with other pestos, Pesto di Carciofi is low in caloric value. Finally the product scores highly in levels of folic acid, minerals and phytonutrients. A range of five varieties was tested by a representative group of consumers who all responded very favourably to its quality.
This research was carried out by Nadia van Rhee as a part of her MSc in Health Food Innovation Management.
We now invite all those interested in wishing to develop the commercial aspect of this unique range of products to contact us through keepfoodsimple@gmail.com.
